At La Patrona, everyone is family.
After leaving Mexico when he was 18, Carlos worked nights at restaurants throughout the US—honing his skills as a dishwasher and prep chef. It was during this time that Carlos unearthed his passion for creating delicious food that everyone can enjoy.
He enrolled at Le Cordon Bleu Culinary Arts Institute and then landed a gig at a three Michelin-starred restaurant in California. After awhile, he decided to return to Edmonton for work, and met Janette—his partner in business and in life—and they started the casa12doce food truck together. The truck was a booming success, so they decided to open La Patrona so their customers could have a more permanent place to enjoy wonderful, authentically Mexican dishes.
